Ellie Stamerjohn is a Registered and Licensed Dietitian practicing in Dallas, Texas. She earned her Bachelor of Science degree in Dietetics and Nutrition from The University of Mississippi in Oxford, Mississippi. She went on to complete her dietetic internship and earn a Master of Science degree in Dietetics from Mount Mary University in Milwaukee, Wisconsin. She began her career at a private practice in Richardson, TX that specializes in PCOS, eating disorders and sports nutrition. She has also held a PRN clinical dietitian position at Baylor University Medical Center in Dallas, Texas where she worked in oncology, cardiovascular, gastrointestinal and general medicine adult care units. Both experiences helped Ellie put her training into practice and improve her skills as a dietitian in both the inpatient and outpatient settings. Ellie is passionate about providing easy-to-digest nutrition information that empowers others to make positive changes in their life. Ellie's goal is to clear up confusion within the nutrition space and help individuals improve their relationship with food and body.

Jillian Fox is a Registered and Licensed Dietitian working in Austin, Texas. She earned her undergraduate and graduate degrees at Utah State University. Jillian has a passion for helping women and adolescents work towards recovery from eating disorders. Her passion began while working at a residential eating disorder facility once she completed her degree and has continued ever since. In her spare time, Jillian is a self-taught food photographer, loves cooking new recipes, and trying out the next spot on her Austin food bucket list. She’s a mom of two cute boys.

Laura is a registered dietitian who earned her Bachelor of Science Degree in Nutrition and Dietetics from Cornell University and then completed her dietetic internship through Queens College. When working with clients, Laura utilizes a counseling style which focuses on implementing sustainable behavior changes that help enhance mental, physical and emotional wellbeing. Laura believes all foods can fit into a healthy diet and empowers her clients to build a positive relationship with food as the foundation to obtaining a healthy and sustainable lifestyle. As a former athlete, Laura is particularly passionate about nutrition counseling for active individuals suffering from eating disorders. She deeply cares about helping clients recover from disordered eating to find a life of food freedom. When Laura isn’t seeing clients, you can find her exploring all the delicious cuisines NYC has to offer, walking in parks, doing at home workout classes or watching her favorite Netflix shows.

Renee has been a registered dietitian for more than 10 years practicing in a wide variety of settings: in hospitals, in cardiac rehabilitation, organ transplant, and even taught nutrition at the university level. However, she has discovered that her true passion is offering nutrition care through a Health at Every Size lens, Intuitive Eating, and eating disorder recovery. She strongly believes in offered compassionate care to all people in all bodies. When not working, she enjoys baking and is an avid reader. She loves spending time at home with her husband and their dog and four cats.

Courtney is a registered dietitian and experienced nutrition therapist.  She completed her Bachelor of Science degree in Dietetics at The University of Arizona and her dietetic internship through Iowa State University.  Courtney is a Certified Eating Disorder Specialist (CEDS) through the International Association of Eating Disorder Professionals (IAEDP).

She comes to Nourish with nearly 10 years of experience working with eating disorders across all levels of care.  Courtney brings years of experience providing medical nutrition therapy to both adults and adolescents and believes in a non-diet approach, working with each individual to incorporate variety, balance, moderation and flexibility.  Courtney is passionate about working alongside each individual to prioritize nutrition as a part of their life and through support and education, works with individuals to develop a healthy relationship with food.  

Courtney resides in sunny Arizona with her husband and 2 children.  She spends her time exploring the outdoors through camping, hiking, gardening and paddle boarding the local waters.

My dietitian has been with me every step of the way the last year and a half as I have battled my eating disorder and countless other health issues that I have. Oftentimes, my doctor or other health care professionals will only focus on the problem that they are treating me for, but my dietitian has really considered everything about my health and life when determining the best path forward for my treatment.

Having an eating disorder can be really complicated, and sometimes other doctors do not understand exactly what I am going through. They’ll ask me questions or prescribe treatment plans that go completely against all the progress I’ve been able to make with my eating disorder. Every time I have had an issue, my dietitian has been there to speak with my doctors to ensure I am getting the best treatment across the board.

I finally feel like I have a champion who believes in me, and my dietitian believing in me has allowed me to believe in myself. The progress I’ve made in 18 months is more than I could have imagined, and I cannot wait to continue my journey with Nourish.

I have had a long battle with my eating disorder, with time spent with dietitians in both residential and outpatient care. I had felt like I was at a pretty good place in my recovery, but then during Covid everything took a turn for the worse. I was quickly slipping back into some of my bad habits. I was stuck in an overly structured recovery program and I needed to find a new approach that worked for me.

After reading up on Nourish, I realized that it was the perfect fit for me - it wasn’t just a one-size-fits-all approach. My dietitian was exactly what I needed to finally start to feel more confident in my ED recovery progress. She has been incredibly compassionate and supportive throughout our time together. She knows about my unique battle with ED, and takes into account my personal preferences in every meeting we have together. She also never judges me for anything I say or do and makes sure I view our sessions together as a safe and supportive space to open up.

Mindfulness

When you slow down and notice patterns, the recovery healing process can feel like it’s working. Mindfulness is a core tenant to our process and will play an integral role in your healing. Mindfulness behavior training while undergoing nutrition for eating disorders therapy improves mental awareness, sensitivity, recall, and reaction to internal body signals and your relationship to food. To center ourselves and foster mindfulness, we incorporate brief practices in sessions that you can easily work into your life.

Support

Our dietitians will be with you every step of the way - both inside and outside of your sessions. As part of nutrition education for eating disorders, it is essential to spend time in healthy social settings, have meaningful conversations, and connect with a supportive mentor. Those undergoing nutrition intervention for eating disorders counseling need external support, which reduces the risk of developing medical issues, such as depression or anxiety. Our RDs will always be ready to help support you through any roadblocks and be right there beside you to celebrate all your wins.
